Sunchoke seed tubers are harvested fresh for orders! Jerusalem Artichokes, also called Sunchokes, are a beauty in the garden and a tasty addition to a meal in the kitchen. A widely adapted perennial to many regions of the U.S. and a cold hardy tuber here in Nebraska. Sunchoke seed tubers are white-fleshed & creamy-skinned; grown using organic and sustainable practices at our farm.

The variety was originally foraged by a friend and we planted a few lbs to grow the stock from there. It's a white tuber that we could be described as similar to White Fuseau although the exact variety remains unknown. Depending on the harvest, there are about 10 tubers per lb and some tubers are much larger than others.
